Cupcakes by Sonja

Last night my sister came home from her condo at Eastwood. Usually when she does I would ask her to buy me some pastries or sweets on her way home. Some of the best pastry shops are, sadly, located in the city center! Of course aside from my sister we rarely visit Makati or Taguig so I don't get to splurge very often on these amazing pastry shops. Anyway, so the other night my sister called and asked what's my request. The first thing that popped in my mind was cupcakes. Automatically my sister knew what I was craving for, cupcakes from Sonja's!

My sister came home with this sweet box of cupcakes from Sonja's. I was like a fat kid (well, technically I am! on the kid part not really!) who finally got his candy bar! She brought home Mint Condition, Mocha Motion, Red Velvet Vixen, Lemon Drop, Melt-in-your-Mouth Flourless Chocolate Cupcake and Berries N' Cream. She knows my favorites that's why I love her so much. These cupcakes define perfection because of how moist they are and the cream, oh the cream, it's just.. I can't even explain how good they are! It's like a more formed and solid icings that taste really well. It definitely melts in your mouth which makes it so scrumptious. My favorite cupcake from Sonja's is the Red Velvet Vixen. A moist cupcake that has cream cheese on top of it. It's sweetness and mild saltiness definitely hits the right spot in your mouth. Thanks Steff for the cupcakes! Within this month I'm making my own version of Red Velvet cupcake so stay tuned for that! ☺

Pan Fried Salmon with Mushroom Sauce

So for tonight I made my folks this simple dish, pan fried salmon with mushroom sauce. Salmon is a family favorite when it comes to seafood. It's been our tradition to sometimes have it for breakfast because of my Dad, who is a Japanese (they usually have salmon for breakfast partnered with rice bowl, of course their shoyu and some nori). This time I'm serving it differently. I'd still use the same method of cooking it for breakfast but instead we'll have it for dinner and I'm adding a creamy mushroom sauce that would perfectly match the juiciness and freshness of the salmon. This particular dish is very easy to make. I was thinking since this is my very first post I would make it easy for myself.

Salmon is one of the most expensive audible fish here in the Philippines as they usually import it either from China, Japan or Korea. It's definitely worth it when you buy one as long as it is cooked right. For my own version of pan fried salmon with mushroom sauce you will be needing the following:

• 2 fresh salmons cut in about 1 inch
• 1/2 cup of Campbell Mushroom Soup
• 1/2 cup of Nestle cream
• 1/2 cup of boiling water
• A lemon for marinating
• Asparagus
• A can of button mushrooms, sliced thinly
• Oil for pan frying
• 1 tablespoon of butter
• Some salt and pepper for seasoning

First, you need to pan fry the salmons. Before you do marinate the salmons with freshly squeezed lemon and some salt and pepper. After pan frying set it aside. In a small pan mixed the boiling water with the Campbell Mushroom Soup and nestle cream. Make sure the fire is on low while stirring the sauce occasionally. Add a pinch of salt and pepper and taste to tell if it is the right amount already. If it is you can then add the button mushrooms and voila your sauce is finish. The last thing we need to do is the sautéing of the asparagus. Again in a small pan sauté the asparagus with butter and a pinch of salt and pepper.

After everything is done you can then start preparing on serving it. On clean plates put the salmons then top it with the mushroom sauce. The asparagus sautéed is of originally a side dish for the entree BUT sometimes you can innovate on how you serve your dish. It's all about presentation. In my case after the mushroom sauce I topped the asparagus and added a button of mushroom on it to make it nicer.

And so there you go! Pan fried salmon with mushroom sauce! I'm very sure your gonna love this simple yet heavy dish as my folks definitely did. Bon Appetit! ☺
